- 1/2 lb. bacon (cut into 1/2-inch pieces)
- 1 1/2 lb. ground chuck (80% lean)

- 1 yellow onion (or medium red, peeled and coarsely chopped)
- 3/4 cup carrots (coarsely)
- 3/4 cup celery (coarsely)
- 6 oz. tomato paste
- 2 tsp. minced garlic
- 1 Tbsp. oregano
- 2 tsp. crushed red pepper
- 1 cup white wine (or dry red)
- 28 oz. crushed tomatoes (preferably fire roasted)
- 2 cups chicken broth
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. soy sauce
- 2 tsp. granulated sugar
- 1/2 cup chopped fresh basil (or parsley, or a combination of both)
- pappardelle pasta (or fettuccini, tagiatelle, or rigatoni. Plan on about 16 ounces, 1 lb for 4 servings.)
- 1 cup grated Parmesan cheese
