- 1 lb. ground pork
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 1/4 tsp. ground nutmeg (freshly)
- 1 Tbsp. fresh thyme
- 6 oz. tomato paste
- 750 mL white wine (bottle, such as Chardonnay, about 3 ¼ cups)
- 1 1/2 cups whole milk
- 1/2 cup light cream
- 28 oz. plum tomatoes (San Marzano ground, such as Pastene brand or Cento)
- 2 bay leaves
- 2 cups water (used as needed)
- 1 lb. linguini
- grated Parmesan cheese (Freshly, for serving)
