- 1 lb. ground beef (grass fed)
- 1 1/2 lb. beef (tough, cubed, we use flank or skirt steak and if you like it extra beefy you can add the higher amount of beef)
- 2 Tbsp. extra-virgin olive oil
- 1 1/2 cups white onion (diced)
- 1 bell pepper (diced, any color)
- 1 Tbsp. ground cumin
- 1 tsp. coriander
- 1 tsp. granulated garlic
- 1/8 tsp. cayenne pepper
- 1 1/2 tsp. sea salt (divided)
- 1 btl. beer (good strong hoppy, we use microbrew IPA)
- 1 cup strong coffee (cold ok)
- 30 oz. roasted tomatoes (can diced, fire-roasted even better)
- 5 Tbsp. tomato paste (we use a concentrated tube, like)
- 1/4 cup brown sugar
- 15 oz. red kidney beans (cans dark)
- 15 oz. white beans (great northern are good)
- 3 cans beans (for 1 bag of hydrated dried beans)
