- 2 Tbsp. low sodium soy sauce
- 1 1/2 inches ginger root (piece peeled, finely grated)
- 1 Tbsp. bourbon (may substitute whiskey or brandy)
- 1/4 tsp. sugar
- 1 cup water
- 2 lb. bok choy (baby or small, cored, then separated into ribs and well rinsed; each rib cut crosswise into 3 or 4 pieces)
- 1 Tbsp. olive oil
- 9 scallions (white and light-green parts, cut crosswise into thin slices, 1/2 cup)
- 12 oz. oyster mushrooms (stemmed, see headnote)
- 2 Tbsp. cornstarch
- 2 tsp. roasted sesame seeds (toasted/, for garnish, available at Whole Foods and at Asian markets; see NOTE, optional)
