Great salad, enjoyed by me and all my guests. I used baby bok choy. I used white wine vinegar and lime olive oil with a splash of fresh lime juice along with garlic salt, onion powder, and pepper as seasoning. I also added a peeled macintosh apple, a small handful of dried cranberries, and a handful of sliced roasted almonds. Delicious!

We used regular bok choy (baby bok choy would be less bitter) & added diced apples and grilled corn for sweetness and extra texture. We left out the ramen seasoning & noodles and instead added a mixture of onion powder, garlic, ginger and pepper to season the dressing. Toasted almonds or walnuts etc would add a nice healthy crunch option as well. Great leftover too. Will make again.

I enjoyed this, but the bok choy as the lettuce base was still a bit too bitter for most of my family. The toasted ramen noodles & sesame seeds are a very tasty touch! I would make this again, but with possibly some other greens mixed in, too. The reason I tried this, however, was because I had a large amount of bok choy that I was trying to figure out how to use, so definitely worth a try for those who enjoy the taste of raw bok choy. The dressing did cut some of the bitterness. I added some stir-fried beef strips and used beef ramen, which also helped to distract from the bitterness.
