- 454 grams sultanas
- 227 grams butter (or Margarine)
- 3 eggs
- 3 cups flour
- 1/2 tsp. baking powder
- lemon
- 1/4 cup sugar

Directions
- Boil Sultanas in just enough water to cover for 8 minutes.
- Strain off water and cut butter into hot sultanas
- Beat in eggs and sugar.
- Sift in dry ingredients and add essence.
- Bake in a slow oven (300 - 325 F) 150 - 160 C for 1, 1/2 hours or until cooked in centre.
