- 1 sliced carrot
- 1 onion (sliced)
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. flour
- 3 cups wine (a full-bodied young, such as a chianti, This is almost a full bottle, I generally just pour in the whole bottle)
- 3 cups beef stock (brown, or canned beef bouillion)
- 1 Tbsp. tomato paste
- 2 cloves garlic (mashed)
- 1/2 tsp. thyme
- bay leaf (a crumbled)
- bacon rind (The blanched)
- 24 white onions (small, brown braised in stock)
- 1 1/2 Tbsp. butter
- 1 1/2 Tbsp. oil
- 1 lb. fresh mushrooms (sauteed in butter)
- 4 Tbsp. butter
- 2 Tbsp. oil
