- 1 cup raw sugar (or sucanat)

- 3 bunches scallions (green onions, root ends trimmed then sliced thinly)
- 5 inches fresh ginger root (piece of, peeled and minced or finely grated)

- 1 tsp. white wine vinegar (or rice vinegar)

- green leaf lettuce (or Red, removed from core, washed and dried thoroughly)
