- 3 eggs (lightly beaten)
- 1 cup vegetable oil
- 3 tsp. vanilla extract
- 2 1/4 cups white sugar
- 2 cups zucchini (finely shredded and drained)
- 3 cups flour (all-purpose)
- 1 tsp. salt
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1 pt. fresh blueberries (you can reserve a few for garnish if so desired, optional)
- 1 cup butter (room temperature)
- 3 1/2 cups sugar (confectioners\')
- 1 lemon juice (and zest of, about 2 tablespoons)
- 1 tsp. vanilla extract
- 1/8 tsp. salt

Used a fruit medley from frozen but thawed. the frosting was the easiest to make but it is very sugary tasting. Dense. Cooked in a 9x13 pan and cooked for ten minutes longer. I did a cinnamon coconut crunch topping.

I used a yellow summer squash (squeezed and drained), frozen blueberries, and added lemon zest and a Tbsp a lemon juice to the batter. I also used half oil half applesauce. It made an 8 in cake and 7 mini loafs. I did end up baking it for a little longer.
This is definitely a keeper recipe. I haven't even frosted the cake yet.

This was amazing! My first time using zucchini to make baked goods, and I am so glad I did. It's very moist and satisfies the sweet tooth perfectly without the guilt of consuming a half gallon of Edy's Chocolate Chip Cookie Dough Ice Cream! 😂

I'll be honest this recipe didn't sound appetizing at first but we had some zucchini that was going bad so I thought I'd give it a try. I loved it and my family loved it! The cake got eaten within a day! We couldn't stop eating it! The frosting was a little weird. I must have done something wrong but other than that it was spectacular! Thank you so much for this recipe!

Everyone raved about this! Instead of greasing and flouring the pan I greased and sugared it. Made for a nicer presentation.

cake itself is definitely moist and dense. Do not use the full amount of frosting as it is super sweet if you use it all like all sides, middle and top. Just do middle and very thin layer top frosting. I do recommended cutting back the amount of sugar. Everyone's taste buds are different!
