Description
Nothing's more refreshing on summer days than a popsicle especially when made with seasonal fruits and yoghurt. Here's how to make these pops dairy-free.
Ingredients

- 300 grams blueberries fresh (or frozen, defrosted)
- 50 grams granulated sugar
- 45 grams lemon juice (freshly squizzed)
- 240 grams cream yogurt
- 50 grams full fat coconut milk
- 10 grams powdered sugar
- 20 grams pina colada mix (or 1 tbsp coconut extract)

Directions
- Combine blueberries, granulated sugar and lemon juice in a blender and puree until smooth. Taste for sweetness and add more sugar if you like. Transfer mixture in a measuring jug and set aside
- In a bowl, whisk together the soy cream, the coconut milk, powedered sugar and pina colada mix.
- Fill the popsicles moulds, alternating layers of coconut cream and blueberry puree
- Freeze 1h then insert the sticks. Freeze until firm preferably overnight.
- Dip the bottom of the moulds in hot water for a few seconds to remove the pops from the moulds. Enjoy!
