Yum. I had no buttermilk so used whole milk with a little vinegar. I left out about a third of the sugar and added honey at the table. I doubled the cooking time (and could have gone a little longer) since my muffin cups are larger than the norm. I left off the toppings to cut calories. This is another Yummly keeper!

I didn't have my muffin pan at the lake, so i made it in a pan like a 6×11 or so and had to bake it a lot longer. i used Avocado oil instead of canola and just had steel cut oats. it seems too thick so i added a little applesauce and a little more buttermilk. i had to add more boiling water, too, initially when covering the oats. I only had pumkin pie spice instead of nutmeg only, but it was such a small amount I was sure that would work and it did.
my husband & I really liked it and i hope to make it as muffins for the family for 4th of July weekend.
