Description
This pie has just 4 ingredients and comes together surprisingly quickly for a simple dessert when you are pressed for time. The addition of almonds not only keeps the crust crisp, but it also adds a nice nutty flavor that complements the blueberries beautifully. Top a slice with a scoop of vanilla ice cream and a drizzle of the (optional) blueberry syrup for the perfect dessert.

- 1 shortcrust pastry
- 450 grams frozen blueberries
- 2 Tbsp. ground almonds
- 3 Tbsp. brown sugar

Directions
- Thaw frozen blueberries in a colander. Collect the thawed juice.
- Preheat oven to 425 degrees Fahrenheit.
- Let the dough rest for an hour, then roll out on a floured surface, and spread in a scalloped pie pan. Sprinkle the bottom of the pan with the ground almonds to absorb the excess fruit juice while cooking. Spread the blueberries on the dough, and sprinkle with sugar. Bake for 20 minutes.
- If desired, make homemade blueberry syrup with thawed juice. Weigh the fruit juice. Measure out half the weight of the fruit juice in sugar. Mix the juice and sugar in a saucepan and boil for about 10 minutes, skimming from time to time.
