- 1 Tbsp. vanilla extract
- 3/4 cup natural peanut butter (I used creamy)
- 3 Tbsp. pure maple syrup (agave syrup, or honey – or a combination of any of the three)
- 2 cups gluten-free oats (old-fashioned)
- 1/2 cup gluten-free flour
- 1 tsp. baking powder
- 1 Tbsp. ground flaxseed
- 1 Tbsp. hemp seeds
- 3 Tbsp. chopped walnuts (or other nuts of your choice)
- 3 Tbsp. coconut flakes (unsweetened)
- 1/2 cup semi-sweet chocolate chips (regular or mini, I use Enjoy Life Semi-Sweet Chocolate Chips, dairy & gluten free)
- 1/2 cup blueberries (dried~ or more if you like)
