- 1 cup nonfat plain greek yogurt
- 1 cup sugar
- 3 large eggs (at room temperature)
- 2 tsp. grated lemon zest (approximately 2 lemons)
- 1 tsp. vanilla extract
- 1/3 cup vegetable oil
- 2 Tbsp. unsweetened applesauce (note: you can use 1/2 cup oil and omit the applesauce)
- 1 1/2 cups blueberries (tossed in 1 tablespoon all-purpose flour)
