- 1 Tbsp. AP flour (I used King Arthur unbleached all purpose)
- 2 1/2 cups fresh blueberries
- 2 cups all purpose flour
- 1/4 toasted coconut (scant cup of)
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup coconut palm sugar (regular white sugar will work)
- 1/2 cup applesauce (I used unsweetened)
- 1 Tbsp. coconut oil (melted)
- 2 tsp. vanilla extract (or 1 teaspoon of vanilla paste)
- 2 Tbsp. white vinegar
- 2 tsp. baking soda
- 1/2 cup vanilla almond milk
