  • 1 cup butter (chopped, at room temperature)
  • 3/4 cup granulated sugar
  • 1 orange peel (finely grated and orange juiced)
  • 3 eggs
  • 1 3/4 cups self-rising flour (sifted)
  • 1 cup blueberries

    Directions

    1. Preheat the oven to 350°F. Lightly grease and line an 8-inch square baking pan with parchment paper.
    2. Beat butter and 3/4 cup of the granulated sugar in a large bowl with an electric mixer, until light and fluffy. Beat in orange peel.
    3. Add eggs, one at a time, beating well after each addition. Add a little flour if mixture begins to curdle.
    4. Lightly fold in flour and orange juice. Fold in berries. Spoon into prepared pan, smoothing top. Sprinkle with remaining 1 tbsp granulated sugar.
    5. Bake for 35-40 mins, until a toothpick inserted into center comes out clean. Cool in pan for 10 mins. Remove from pan; cool completely on a wire rack. Dust with powdered sugar to serve.
