- 1 Tbsp. baking powder
- 1/4 tsp. salt
- 1 cup plain yogurt (I really love goat or sheep yogurt lately, but you do you!)
- 2 eggs
- 1/2 cup coconut sugar
- 2 tsp. vanilla extract
- 2 tsp. lemon zest (optional, but so lovely!)
- 1/3 cup coconut oil (melted)
- 2 cups blueberries (option: crush half of the blueberries and leave the other half whole!)
