- 1/2 cup yogurt (plain full-fat Green)
- 2 eggs (lightly beaten)
- 2 cups self rising flour
- 4 egg whites
- 2 tsp. baking powder
- 1/2 tsp. vanilla extract
- 2 lemons (unwaxed, if waxed, wash them in hot, soapy water and dry them to get rid of the wax before using)
- 7 oz. blueberries
- 1/4 cup confectioners' sugar (sifted)
- 2 Tbsp. limoncello (or lemon juice for an alcohol-free version)
