- 2 whole mackerel (: Filleted, pin boned and each fillet cut in half. Try and get your fishmonger to do this for you, if you have to do it yourself budget 15 minutes.)
- 100 grams coarse sea salt
- 100 grams sugar
- 1 pomelo
- 10 asparagus tips (the spears only.)
- 1 white radish
- 2 red radish
- 4 Tbsp. olive oil
- 2 Tbsp. juice (Pomelo)
- 1 tsp. sugar
- 1/4 tsp. salt
- 1/2 tsp. Dijon mustard
