- 2 blood oranges (or oranges, zested, skin removed and flesh cut into segments)
- 80 grams pomegranate seeds (fresh)
- 3 Tbsp. golden syrup (plus an extra 2 tbsp to serve)
- 1 Tbsp. campari
- 1 Tbsp. gin
- 100 grams unsalted butter (softened, plus extra to grease)
- 100 grams caster sugar
- 1/2 tsp. vanilla extract
- 2 large free range eggs
- 100 grams self raising flour
- 50 mL milk

- 1 liter pudding (basin, well buttered)
