- 115 grams icing sugar
- 72 grams egg whites (if possible, aged a day)
- 36 grams sugar (1.25 oz)
- 1 tsp. orange extract
- 1/4 tsp. salt
- food colouring (Optional:)
- cacao nibs (Optional:, to sprinkle on top)
- buttercream
- 1/2 cup unsalted butter
- 2 cups icing sugar
- 1/4 cup curd (blood orange, I had some leftover based off of this recipe but I think if you squeezed 1/2 a blood orange and increased the amount of icing sugar, it would work as well)
