- 1 yellow onion (large, diced)
- 1 garlic clove (minced)
- 2 cups carrots (diced, about 4 medium carrots)
- 5 Tbsp. olive oil (divided)
- 2 cups frozen peas (or fresh)
- 4 cups rice
- 4 cups chicken broth (no sodium)
- 1 cup water (or more, depending on your rice cooker instructions)
- 2 Tbsp. salt
- 1/8 tsp. cinnamon
- 1/2 tsp. dried oregano
- 1 1/2 lb. chicken breast (3-4 breasts, the thinner the better)
- 2 Tbsp. paprika (smoked paprika if you have it)
- 2 tsp. salt
- 1 1/2 tsp. garlic powder
- 1 1/2 tsp. onion powder
- 1/2 tsp. black pepper
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 1 1/2 tsp. cayenne pepper (to taste.. I didn’t use any and it was still delicious!, optional)
- 4 Tbsp. butter
