Yyyyyuuuuummmmmmmmmmyyyyyyy!!
I made this and tweaked it some. I didn’t have a salad or chicken was, so I used rice instead. I added uncooked rice, minced onions, garlic olive oil, salt and pepper to my rice cooker and let it cook.
I cooked the chicken according to the directions a little bit longer because…. salmonella. I roasted the broccoli. I also added some garlic olive oil (just a little bit) and some Sazón Goya Tropical to the avocado. Perfecto!!
I am making this again tomorrow and again without the salad but will be using cauliflower as my base.

Excellent meal that everyone enjoyed. Beautiful colors, great variety of textures and the chicken seasoning is on point. Simple, quick, adding to our regulars.

Next time I would find a way to roast the chickpeas a little longer. Would definitely make again.

Love the combination of flavors in this. I made the mistake of not using thinly sliced chicken. Also I would recommend making the vegetables first prior to starting the chicken so that everything can finish around the same time.

Excellent! You can add other veggies too, whatever you have in the frig. I added zucchini and red onions

This wasn’t what I expected it to be I roasted the cabbage with everything else. Added salt, pepper, and garlic powder to the veggies and I still want a fan. Will make again, just with some tweaks!

Tasty and filling.
I modified it. Used cayenne pepper instead of chilli powder.

Amazing flavors and combos. Used a bed of greenery instead of red cabbage. Added 1/2 red onion to veggies. Remember if chicken breasts are small, cut down on seasoning amounts! Topped it all with a bit of feta cheese. This may be a new fave!!
