- 4 blocks ice (ice pucks made with plain water and fresh berries)
- 3 1/2 cups blackberries (560 g)
- 3/4 cup water (180 mL)
- 1/2 cup sugar (130 g)
- 1 lemon (30 mL juice)
- 1 pinch kosher salt (0.9 g)
- 2 kiwifruits (50 g, peeled, sliced, and quartered, for garnish, optional)

Directions
- Fill your molds with 1/4 cup (40 g) berries (about 10-12 berries). Then fill with water to the fill line and freeze for 12 to 24 hours.
- This can be done the day before. In a saucepan, combine 2 1/2 cups (400 g) berries, 3/4 cup (180 mL) water, 1/2 cup (130 g) sugar, lemon juice and pinch of salt. Bring to a boil, reduce heat to medium-low and simmer for 15 minutes. Puree in a covered blender making sure not to splash up hot liquid. Strain and cool completely.
- Peel and slice your kiwifruit. Add to a bowl and reserve for garnish.
- This recipe does require tempering. Make sure your coarse blade attachment is in place. Shave your ice with frozen berries into a cup or bowl. Top with syrup until ice is coated. Top your ice with kiwifruit for garnish.
- Tips: The blackberries can be swapped for raspberries, strawberries or blueberries or all the above to create a mixed berry flavor. You can use this syrup over plain water shave ice with a fine blade attachment but remember to thin it out a bit with cold water for the finer ice. It is normal for this shave ice syrup to float on the surface of the ice without blending in but that is okay because the berry flavor is already in the ice.
