- 3 cans black beans
- 1 can (14.5 oz.) diced tomatoes (I like Muir Glen organic tomatoes)
- 1 chili pepper (diced Chipotle, from a jar of Chipotles in Adobo Sauce - or substitute a pinch of ground Chipotle chile powder)
- 2 Tbsp. olive oil
- 1 lb. lean ground beef (very, less than 10% fat)
- 1 purple onion (large, very finely diced)
- 1 Tbsp. chile powder (or more regular, I used Penzeys, other brands may say New Mexico chile powder or Mexican chile powder)
- 1 Tbsp. ancho chili ground pepper (or more, also Penzeys, Ancho chile powder adds great flavor, but can use more regular chile powder)
- 1 pinch chile pepper (ground Chipotle, also from Penzeys, Chipotles are smoked jalapenos, and the ground chipotle is very hot so use sparingly)
- 2 tsp. ground cumin (or more)
- 2 cups homemade beef stock (or 1 can beef broth)
- 2 Tbsp. tomato paste (I used Amore Tomato Paste which comes in a tube, a product I received to sample that I'm really loving)
- 1/4 cup fresh lime juice (about 4 limes)
- 1 bunch cilantro (chopped)
- 2 avocado (finely diced)
- black ground pepper
- salt
