- 1 large bell pepper (any color, chopped about 1 cup or 5 oz.)
- 6 cloves garlic (minced)
- 1 Tbsp. mild chili powder
- 1 tsp. ground cumin
- 1 tsp. Mexican oregano (or regular oregano)
- 1 tsp. smoked paprika
- 1/2 tsp. chipotle chile powder (or to taste)
- 1 cup black beluga lentils (rinsed and picked over, see notes below)
- 1/4 cup red lentils (split, or masoor dal rinsed and picked over)
- 4 cups low sodium vegetable broth (I use Pacific Foods Organic)
- 16 oz. fire roasted tomatoes
- 1 tsp. low sodium soy sauce (or gluten-free tamari or coconut aminos)
- 1 tsp. balsamic vinegar
- 1 tsp. salt (optional or to taste)

yummy!! used red kidney beans and yellow lentils and tomatoes, chili's, corn and other seasoning. increased water by a full cup. delicious!!!

Quite good i used hot chili powder and it had a nice bite. I will definitely make this again. I also doubled the cumin and chili powder.
