- 1 fennel bulb (– cored – quartered – thinly sliced)
- 1/2 cup fennel (Stalks – thinly sliced)
- 1 orange bell pepper (– diced)
- 1 clove garlic (– minced)
- 3/4 cup asiago cheese (Aged, optional, you might need to add some salt)
- 2/3 cup tangerine juice (Fresh Squeezed)
- 1 tsp. tangerine zest (optional)
- 1/4 cup champagne vinegar
- 1/2 cup extra-virgin olive oil
- 2 shallots (or 1/4 Cup)
- 2 cloves garlic (or 2 Teaspoons)
- 1 tsp. Dijon mustard
- 1/2 tsp. sea salt (or to taste)
- 1 dash black pepper
