- 1 cup all-purpose flour
- 1 tsp. baking powder (preferably aluminum-free)
- 1/2 tsp. sea salt (or kosher)
- 1 tsp. ground cinnamon
- 3/4 tsp. ground allspice
- 1/4 tsp. ground cloves
- 1/2 tsp. freshly grated nutmeg
- 4 oz. unsalted butter (at room temperature)
- 3/4 cup dark brown sugar (packed)
- 2 large eggs (at room temperature)
- 2 tsp. vanilla extract
- 1 tsp. aromatic bitters (optional)
- 1/4 cup blackstrap molasses (regular molasses can also be used)
- 3/4 cup walnuts (lightly toasted and coarsely chopped)
- 1/3 cup dark rum (for aging the cake, plus more if desired)
