Description
Smoky, tender black-eyed peas served over rice is the perfect dish for New Year’s Day. Also known as Hoppin’ John, black-eyed peas (or field peas) are believed to bring good luck into the new year. Rice and beans are African in origin, and black-eyed peas and rice spread in popularity across the southeastern United States during slavery. However, the New Year’s tradition may go back even hundreds of years before that, as some say that people first ate black-eyed peas for good fortune as part of Rosh Hashanah, the Jewish New Year. This lowcountry version is cooked on the stovetop and prepared with smoked ham hocks, which lend a delicious meaty flavor. Serve the dish with cornbread, collard greens, or fried fish for a complete soul food meal. The recipe, which makes 6 cups, is a Yummly original created by Cooks with Soul.
Ingredients
- 1 lb. dried black-eyed peas
- 2 smoked ham hocks (meaty, each about 1 lb.)
- 2 tsp. granulated garlic
- 1 tsp. granulated onion
- 1 tsp. black pepper
- 8 cups water
- kosher salt (to taste)
- 6 cups cooked rice
- sliced green onions
- hot sauce (optional)
Directions
- Rinse black-eyed peas in a strainer and sort for any debris. Add black-eyed peas, ham hocks, granulated garlic, granulated onion, and pepper to a large pot. Pour in water and bring to a simmer over high heat.
- Cover pot, reduce heat, and cook black-eyed peas until tender, 1-2 hours. (Some black-eyed peas cook faster than others, so start checking them after 1 hour and then every 15 minutes after that.)
- Remove the ham hocks from the pot, let tgen stand until cool enough to handle, and then pull the meat from the bones.
- Drain black-eyed peas, reserving the liquid, if you like, and put peas in a serving bowl. Stir in the meat from the ham hocks and add salt to taste.
- Spoon rice into wide bowls, ladle the black-eye peas on top, and add some of the reserved braising liquid, if you like. Sprinkle with green onions and serve with hot sauce.
