This is delicious! Did not add bacon, cooked vegetables in grape seed oil, added a couple sprigs of thyme and a sprinkle of smoked paprika. Great flavor.

This turned out great!
Wife says she liked how the ham added a smoky depth to the taste experience. I grew up in the South and my mother served black-eyed peas regularly; she had some ham hock in there, but not this much ham as I recall, but I like this and would do it again.
I like chili peppers better than jalapeños so I swapped them; it totally worked. We were also pretty generous with the garlic and bacon…so yum! I soaked the dry peas overnight and then some, so the 8 cups of broth may have been a little too much, but it worked out. I served some over rice which was good. These with some collards is definitely a full meal! We are now expecting prosperity in the new year and look forward to more of these black-eyed peas!
