This is my favorite recipe! Very simple and flavorful. I garnish with diced onion and it is delicious!

Good recipe but it needed something so on my second time with the recipe I added; 1 can of stewed tomatoes which I diced and added with the juice, 1 med. / lg. diced onion and in lieu of plain white rice I used a blend of basmati rice, split lentils and red quinoa. I tossed in some saffron (just a pinch) and I also doubled the amount of cumin to really boost the flavor. Turned out fantastic and we will be sure to prepare it this way again. A friend suggested some cilantro but my husband and I are not fans. I rated this recipe based on the original directions.
