One of the better vegitairian recipes, will do anouther jalapeno. it was very good.

Turned out well! Exactly as promised. Good portion for a family of four. Kids have it a C+, Mom and Dad give it an A!
Will probably do with vegan cheese next time to trim some fat and calories and add extra cilantro and a bit more salt, but there will definitely be a next time. Also... I bet we could do it in the instant pot!
