- 1/4 cup all-purpose flour (I used whole wheat flour)
- 2 Tbsp. cooking oil (I used coconut)
- 2 tsp. cumin
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. chili powder
- 15 oz. black beans (rinsed and drained)
- 1 1/2 cups corn (I used frozen, thawed)
- 6 oz. baby spinach (fresh)
- 6 green onions (thinly sliced)
- 1/3 cup cilantro (chopped)
- 2 tsp. cumin
- 3 cups cheese (shredded 3, blend, or pepper jack, etc.)
- 8 whole wheat tortillas (I only needed 6, due to my change at the end)
