- 1 cup lentils (I used green French lentils but you can use ordinary brown lentils)
- 1 can black beans
- 1 cup red bell pepper (finely chopped)
- 1/2 cup red onion (finely chopped)
- 1/2 cup green onion (finely chopped, scallions green part only)
- 1 cup chopped fresh cilantro (finely)
- 2 Tbsp. olive oil
- 2 Tbsp. chicken stock
- 1 tsp. Dijon mustard
- 1 Tbsp. fresh lime juice (can use apple cider vinegar)
- 1 tsp. worcestershire sauce
- 1 tsp. minced garlic (finely, I used garlic puree from a jar)
- 1/2 tsp. dried oregano (preferably Mexican oregano)
- 1 tsp. cumin seed (can use ground cumin)
- 1/2 tsp. ancho chile powder (or use any mild chile powder)
- 1/2 tsp. Spike Seasoning (or more)
- ground pepper (fresh, to taste)
- hot sauce (to taste, I used green Tabasco sauce)

The dressing is a bit over the top with so many ingredients and at the end the flavour is just ok. Could also simply use olive oil, lime juice, lime zest, salt & pepper and a dash of hot sauce. Nice and filling veggie option with lots of good healthy nutrients!
