- 1 cup water
- 1/3 cup lime juice (juice from ~3 limes)
- 1/2 tsp. salt
- 2 Tbsp. vegetable oil
- 2 red onions (medium, 12 oz, small dice)
- 4 cloves garlic (minced)
- 2 Tbsp. tomato paste
- 1 Tbsp. vegan Worcestershire sauce
- 2 tsp. chili powder
- 1 tsp. ancho chili powder (or more chili powder)
- 1 cup chicken (style vegetable broth, plus more to thin if desired)
- 15 oz. diced tomatoes (1 can, or 1 1/2 cups diced fresh tomatoes)
- 6 cups black beans (2 30 oz cans, drained but not rinsed)
- 2 tsp. salt (to taste, less if beans are salted, more if they weren't)
- freshly ground black pepper (to taste)
- 2 Tbsp. lime juice (juice from 1 lime)
