  • 1 cup truRoots Organic Quinoa (uncooked)
  • 2 cups water
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup Santa Cruz Organic Pure Lime Juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 14.5 ounces black beans
  • 1/2 cup Roma tomatoes (red ripe, seeded and chopped)
  • 1/2 cup diced red onion
  • 1/4 cup red pepper (diced)
  • 1/4 cup jalapenos (seeded and chopped)
  • 2 tablespoons chopped fresh cilantro

    1. COOK quinoa according to package directions. Cool to room temperature. Fluff with fork.
    2. WHISK together oil, lime juice, cumin and salt in large bowl.
    3. ADD quinoa, black beans, tomatoes, onions, red pepper, jalapenos and cilantro to bowl. Stir to combine. Chill 30 minutes.
