- 1 cup truRoots Organic Quinoa (uncooked)
- 2 cups water
- 1/3 cup extra-virgin olive oil
- 1/4 cup Santa Cruz Organic Pure Lime Juice
- 1 tsp. ground cumin
- 1/2 tsp. salt
- 14.5 oz. black beans
- 1/2 cup Roma tomatoes (red ripe, seeded and chopped)
- 1/2 cup diced red onion
- 1/4 cup red pepper (diced)
- 1/4 cup jalapenos (seeded and chopped)
- 2 Tbsp. chopped fresh cilantro

Directions
- COOK quinoa according to package directions. Cool to room temperature. Fluff with fork.
- WHISK together oil, lime juice, cumin and salt in large bowl.
- ADD quinoa, black beans, tomatoes, onions, red pepper, jalapenos and cilantro to bowl. Stir to combine. Chill 30 minutes.
