- Dutch process cocoa powder (½ cup plus 3 tablespoons unsweetened, alkalized, 2? ounces, I tested with Green & Black’s organic alkalized cocoa powder and E. Guittard alkalized cocoa powder)
- 1/2 tsp. fine sea salt
- 4 large egg whites (cool room temperature)
- 1 Tbsp. vanilla extract
- 2 cups walnuts (toasted for 10 minutes in a 350º oven, cooled, and then coarsely chopped, untoasted walnuts also work just fine)
