- 1 sweet onion (medium)
- 1/2 Tbsp. olive oil
- 1 Tbsp. light brown sugar
- 1 Tbsp. butter
- 4 cups mashed potatoes (prepared)
- 1/2 cup brown gravy (prepared)
- 1 green onion (or chives for garnish, optional)

Directions
- Heat a skillet on medium-low heat. Add olive oil and onions. Stirring occasionally, cook the onions until they are translucent. This may take 30 minutes…no need to rush it.
- When onions are translucent, add the butter and brown sugar, stirring until the onions are golden brown. Remove from the heat.
