- 1 1/2 lb. andouille (sliced, can substitute smoked sausage if necessary)
- 1 bell pepper (chopped)
- 1 onion (large, chopped)
- 4 stalks celery (chopped)
- 2 Tbsp. garlic (chopped)
- 12 oz. tomato paste
- 28 oz. tomatoes (diced)
- 8 cups stock (i like to mix chicken and beef, but it's up to you)
- 3 Tbsp. Creole seasoning (see below or use something like Tony Chachere's or Emeril's)
- 1 tsp. worcestershire sauce
- 3 bay leaves
- 4 cups long-grain white rice
- 2 Tbsp. Italian parsley (fresh, minced)
- 2 tsp. cayenne pepper
- 1 tsp. paprika
- 1 tsp. black pepper
- 1 tsp. white pepper
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. dried thyme
