- 3 lb. tri tip (cubed or use short ribs, not cubed, I used tri-tip, but I actually think short ribs would have been better)
- 1 onion (diced)
- 3 leaves jalapeños (seeded and diced, some of the seeds for more heat)
- 1 red pepper (seeded and diced)
- 4 cloves garlic (minced or grated)
- 6 Tbsp. chili powder
- 1 Tbsp. cumin
- 2 tsp. oregano
- 2 tsp. salt
- 1 tsp. pepper
- 1/2 tsp. cayenne pepper
- 1/8 tsp. canela
- 14 oz. diced tomatoes (1 can ,fire roasted)
- 12 oz. Lone Star Beer (1 can ,or any beer)
- 1 cup coffee (unsweetened)
- 2 oz. tequila (optional)
- 3 whole chipotle chiles in adobo (minced)
- 5 cups beef broth (4-)
- 1/4 cup masa harina
- 1 oz. dark chocolate
- 2 cups black beans (cooked, drained and rinsed if using canned)
- 2 limes (juiced)
