  • 4 cups rice (cooked short grained, like a sushi rice*)
  • 1/2 pound ground beef
  • 2 teaspoons soy sauce (I used tamari soy sauce)
  • 2 cloves garlic (minced)
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon ground black pepper (freshly)
  • 15 cucumbers (baby, sliced into rounds)
  • 1/3 cup sugar
  • 1 cup water
  • 1 cup rice vinegar
  • 1 pinch salt
  • 1 pound mushrooms (choice, thinly sliced, I used a mix of shitake, bunapi and beech)
  • 2 teaspoons vegetable oil
  • 4 cloves garlic (minced)
  • 2 tablespoons mirin
  • 1 tablespoon tamari soy sauce
  • 1 tablespoon sesame oil
  • 2 cups bean sprouts
  • 2 tablespoons rice vinegar
  • 1 pinch salt
  • 1 tablespoon red chile pepper (ground, powder, such as cayenne, I left out because of kids)
  • 2 cloves garlic (minced)
  • 1 pinch kosher salt (heafty)
  • 2 teaspoons brown sugar
  • 1 teaspoon sesame oil
  • 1 egg (fried, per person being served, probably 4-6, preferably with a runny yolk)
  • 2 cups jicama (Julienned)
  • 2 cups shredded carrots
  • kimchi (choice--we love cucumber kimchi, see notes above)
  • gochujang (Korean hot "sauce" that is more like a paste)
