- 3/4 tsp. fine sea salt (plus a pinch)
- 2 Tbsp. canola oil
- 2 tsp. toasted sesame oil
- 1 Tbsp. black sesame seeds (may substitute toasted white sesame seeds)
- 4 cups white rice (or cold cooked brown)
- 2 tsp. rice vinegar (preferably unseasoned)
- 2 squares nori (toasted seaweed)
- 2 cups kimchi (chopped)
- 8 oz. tofu (smoked, cut into 1/4-inch slices)
- gochujang (for serving, see headnote; may substitute Sriracha)
