- 1 medium head cauliflower
- 1/2 cup parsley

- 2 cloves garlic
- 1/2 red onion (diced, 1/2 cup onion)
- 1/4 cup kimchi (chopped)
- 3 Tbsp. kimchi juice (from the jar)
- 1 Japanese eggplant (small, cut into similar sized chucks as the other vegetables below)
- 1 zucchini (medium green, cut into chunks similar to eggplant)
- 1 head broccoli (cut into florets)
- 8 oz. portobello mushrooms (sliced in halves)
- 1 red pepper (cut into similar size as mushrooms)
- 1 Tbsp. garlic (finely minced)
- 1 Tbsp. fresh ginger (finely minced)
- 1/4 cup water
- 2/3 cup brown sugar
- 2/3 cup rice vinegar
- 1/2 cup sauce (Chung Jung One brand Spicy Miso Gochujang)
- 4 scallions (sliced)
- 1/3 cup peanuts (crushed, optional)
- 1 Tbsp. black sesame seeds
