I love this recipe. I bring it to work for lunch once or twice a month and everybody loves it. I put it on a bed of spinach and add Persian cucumbers and Red or yellow or orange peppers, and to top it off with organic cashews. It is similar to the salad at coffee bean and tea leaf that they charge eight dollars for. So I make my own and its delicious!
