- 1 piece garlic bread (Optional)
- 3 slices ciabatta (thick, or other sturdy bread)
- 1 Tbsp. finely chopped garlic
- 1/4 cup extra virgin olive oil
- 1 tsp. minced garlic
- 1 tsp. fresh oregano
- 1/2 tsp. dried oregano
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 1/4 cup red wine vinegar (good quality, I used Cabernet red wine vinegar)
- 1/2 cup extra virgin olive oil (good quality)

Great salad. I added avocado to mine because I had an extra one lying around. Instead of garlic bread, I had two day old Foccaica bread that I dusted with olive oil and popped it in the oven until brown. The dressing was meh. I’m not sure if my red wine vinegar was dull/ low quality or if the dressing just lacked flavour. Next time, I will use Balsamic vinegar to see if that helps. But honestly, who cares. If the veggies are crisp and fresh, the salad doesn’t even need dressing. This salad was my side for a Greek-Style lemon and dill chicken dish and it went well with the main.
