- 2 cups zucchini (grated, from appx. 1 medium zucchini)
- 125 grams banana (weighed with the skin on, about 1 small banana)
- 225 grams dark brown sugar (or, 1 1/4 cups lightly packed light)
- 1 1/2 tsp. pure vanilla extract
- 2 large eggs
- 100 grams sourdough (appx. 1/2 cup, discard OR bubbly, active 100% hydration starter)
- 250 grams all-purpose flour
- 1 tsp. canela
- 1/8 tsp. nutmeg
- 1 1/2 tsp. baking soda
- 1/4 tsp. fine sea salt
- 125 mL flavored oil (neutral, like sunflower, mild olive oil works, too)
- 60 mL milk (or unsweetened almond milk)

04-15-2021 made 2 loaves, one I added walnuts and chocolate chips, the second loaf I omitted the spices and added 1/4 cup of lemon juice and lemon zest. Used whey instead of milk. Moist and delicious

Omitted the milk; reduced sunflower oil by 25%.
Increased banana, zucchini and discard 10-20g ea;
Increased salt a touch (by simply not leveling the measuring spoon)
Result was really good! Would definitely make again.
