I made this for Thanksgiving, as we are not turkey lovers. I like the basic and simple ingredients in this recipe. My changes; I seared the roast in a large cast-iron skillet, (stove top) then put in the oven. I made a gravy, instead of au jus.

I cooked my 5.8 lb roast for 3 hrs at 200 and it only recorded 35 degrees on the thermometer. I questioned the temp but followed the recipe/ didn’t work!
