- 5 potatoes (medium, cut in large cubes)
- 2 onions (large, finely sliced)
- 2 inches cinnamon stick
- 2 tsp. cumin seeds
- 1 tsp. turmeric powder
- 4 tsp. Kashmiri red chili powder
- 1 Tbsp. coriander powder
- water (unchecked▢, as needed)
- 2 tomatoes (large, sliced)
- 5 green chilies (slit or sliced)
- 4 cups basmati rice (Long Grain)

- 2 bay leaves
- 1 1/2 inches cinnamon sticks
- 1 tsp. caraway seeds (shajeera or Cumin Seeds)
- 4 cloves
- 5 green cardamom
- 1 star anise
- 1 Tbsp. ghee
- 1/4 cup mint leaves
- 3 Tbsp. ghee
- 1 pinch saffron (soaked in 4 tablespoons of milk)
- 1/3 cup onions (caramalised, or fried onions, Birista)
