- 1/2 lb. italian sausage (ground, remove casings if in sausage form)
- 1/2 cup pepperoni (diced)
- 12 oz. tomato paste (can)
- 1 can crushed tomatoes (28 oz.), can, Italian,)
- 15 oz. diced tomatoes (can)
- 1 cup heavy cream (or half and half)
- 1 cup red wine
- ground black pepper (to taste)
- sea salt (to taste)
- 3/4 cup parmigiano reggiano (shredded)
- parmigiano-reggiano (Parmesan or Asiago for grating/serving)
- 2 cups water (pasta, reserved from cooking pasta and for thinning the sauce as it cooks and thickens)
- 3/4 cup fresh herbs (chopped, combination of basil, oregano, Italian flat parsley, thyme)
