- 1 onion (medium, diced)
- 3 garlic cloves (minced)
- 2 cans crushed tomatoes (one 28 ounces, one 15 ounces)
- 2 cans tomato paste (6 ounces each)
- 2/3 cup water
- 3 Tbsp. sugar
- 3 Tbsp. fresh parsley (minced, divided)
- 2 tsp. dried basil
- 3/4 tsp. fennel seed
- 3/4 tsp. salt (divided)
- 1/4 teaspoon coarsely ground pepper (coarsely)
- 1 large egg (lightly beaten)
- 1 ricotta cheese (carton, 15 ounces)
- 4 cups shredded part skim mozzarella cheese
- 3/4 cup grated Parmesan cheese

Deviated from the recipe a little. Added turmeric, forgot basil. Didn’t use fennel seed. Used tomato sauce and crushed tomatoes rather than paste and water. Added half bag of frozen spinach, dried parsley. Used Mexican granulated white cheese like Parmesan, full fat mozzarella and ricotta. Added a little smoked paprika to the meat.
Used tea kettle water to heat noodles in pan on counter top and that worked well. Regretted not adding oil to noodles as they stuck together making separation difficult. Overall very good although next time I’ll add a bit more sauce to suit.

A great recipe! As I don't care for Italian sausage or fennel seeds, I omitted those and added more ground beef. In place of ricotta, which has a texture I can't stand, I used a bechamel sauce. Heavenly!
